This no-bake and no-fuss tart is a celebration of summer and its best fruits!
For the base, I prepared a chocolaty crumbly mix with Oreo biscuits and melted butter (like for a cheesecake). The cream is a consolidated recipe of mine that you will find also for my other fruit tart recipe. To garnish this tart I used my favorite summer fruit: peaches, apricots, cherries and strawberries.
To make this tart I used a 23cm tart tin.

Prepare the cream

Pour the milk in a saucepan. Add the vanilla bean paste and the peel of half lemon. Place it on the hob and heat it (do not boil). In the meantime, mix the eggs, cornflour, and sugar in a bowl, using a whisk. When the milk is hot, remove the saucepan from the hob, remove the lemon peel, and slowly add the egg mixture. Combine well with a whisk and cook over low-medium heat for 5 minutes or until the sauce thickens. Cover with cling film and set aside. Leave to cool down.
Prepare the crust

Place the biscuits in a food processor and reduce them into crumbs. Add the butter and continue to mix in the food processor for a few more seconds. Place the biscuit mix in a cake tin and press well on the bottom and sides. Place in the fridge and leave to set for 20-30 minutes.
Assemble the tart

Once the base is set and cream cool, pour the cream into the biscuit base and spread evenly.

Garnish with the summer fruits. Mix a tsp of jam - apricot or strawberry - and a tsp of water in a small bowl and brush the fruit with the mixture, so that the fruit remains glossy.
