Fresh pasta dough is so easy to make. There are many recipes out there and different variations, more or fewer eggs, plain flour, semolina flour, etc. This is my simple recipe, which you can use to make fresh tagliatelle, lasagne sheets or ravioli.
Pasta dough (basic recipe)
Combine all the ingredients in a large bowl, using a blender or your hands.
Transfer the mixture onto a large wooden board and start kneading with your hands. Knead energetically for approximately 5-10 minutes, dust more flour when needed.
You should get a smooth and elastic dough. Wrap it with cling film and let it rest in the fridge for at least 30 minutes.
After the resting time has passed, roll (the dough should be as thin as needed) and cut as desired or use a pasta machine to make your pasta sheets, spaghetti or tagliolini.
