Korean style BBQ Chicken with Spicy Sesame and Soy Sauce

This dish is inspired by Korean cuisine. I am not an expert and I probably know very little of it, but this recipe certainly gives the dish a Korean flavour. Moreover, it is ready in less than 30 minutes, making this dish a good option for a weeknight meal.

First thing to do is to cook the rice and boil the green beans (you can also combine it with egg fried rice, if you wish). While these are cooking, prepare the sauce. I did not marinate the chicken, but I suggest to prepare the sauce in advance and let it rest for 10 minutes so to enrich its flavour and taste.

Finally, prepare the chicken. I used diced chicken breasts: I tossed the chicken with cornflour, which helps to obtain a crispier and caramelized meat while cooking. Pan-fry the chicken in oil until it is crisp. Then add the sauce and let it simmer for 10 minutes: the sauce will slowly thicken and caramelize the meat. Serve hot and immediately!

  1. Start with boiling the rice and green beans as they take most of your time. Once they are ready, drain from any excess water and set aside. Season with salt according to your taste.
  2. Toast the sesame seeds. In a small bowl, combine the ingredients for the toasted sesame seeds, garlic, ginger, chilli and soy sauce. Set aside and leave to rest for 10 minutes.
  3. Dice the chicken breasts. Toss the chicken in cornflour. Heat the oil in a large pan over medium heat. Add the chicken and brown all over for approximately 5 minutes or until it becomes brown and crispy. Pour in half of the sauce mix. Bring the sauce to a boil over medium-high heat and cook for 10 minutes. Remove from the heat.
  4. Prepare your plate: divide the rice and green beans into two bowls; add the chicken and pour over the remaining sauce. Sprinkle over with spring onions and fresh parsley. Serve immediately.
