Egg Fried Rice with Chilli and Garlic Butter Prawns

This is an incredibly easy and quick dish to prepare. Perfect for those weeknights when you feel a bit lazy but still want to enjoy a homemade meal.

You’ll have to marinate the prawns and cook the rice first. Then you’ll need only a wok or pan to cook and combine all the other ingredients. Start with preparing the egg fried rice. Once this is ready, transfer it to a plate. Use the same wok/pan to quickly cook the chilli and garlic butter prawns, which will be ready in 3-4 minutes. Finally, add the prawns to the egg fried rice and enjoy your meal!

  1. First of all, place the cleaned prawns in a bowl. Add the chilli, garlic, parsley and basil, all finely chopped, and mix well. Set aside. Cook the basmati rice according to the instructions on your package (normally between 10-12 minutes). In the meantime, prepare the other ingredients for the egg fried rice.
  2. Heat the oil in a wok/large pan. Add the onion, finely sliced, and cook on medium/high heat for 10 minutes or until golden brown. Finely dice the carrot. Add the diced carrot and frozen peas, combine well and cook for another 5 minutes. Your rice should be ready by now. Set aside for a moment and drain it from any excess water.
  3. Move the vegetables to one side of the wok/pan. Crack the eggs directly into the wok/pan. Leave the eggs there for a few seconds, until the egg whites turn white, and then scramble them until cooked (it will take approximately a minute) before combining them with the vegetables.
  4. Add the cooked rice and combine well with the eggs and vegetables. Cook for a minute on medium/high heat. Add the salt and soy sauce and mix well. The egg fried rice is now ready. Transfer it on a large plate.

Cook the prawns

  1. Use the same wok/pan, where you cooked the egg fried rice. Clean the pan with a kitchen towel and remove any remaining rice. Add a tsp of oil and replace the wok/pan on your cooking hob, on high heat. Once the oil is hot, add the prawns (including the garlic, chilli and herbs of the marinade) and sear on both sides until pink, 2-3 minutes. Add the butter and black pepper. Continue to cook the prawns in the butter until it begins to caramelize and turn light golden brown, another 1-2 minutes. Complete with a squeeze of lemon/lime juice. Immediately transfer the prawns on top of the egg fried rice.

  1. Add the cooked prawns on top of the egg fried rice and then divide it into individual plates. You can add more soy sauce or squeeze more lemon/lime juice, according to your taste!
