Is it possible to make a delicious meal in only 20 minutes? Yes, it is!

You will need most of that time to boil the rice only, and you can use this time to chop all the ingredients for your salad. I used plum tomatoes, tuna, corn, olives, yellow peppers, and spring onions. I well seasoned with salt, pepper, olive oil and a few leaves of fresh basil. Boil a few eggs to garnish and serve with mayonnaise on the side.

It is almost easier to do this dish than explaining how to do it!

  1. Boil the rice in a large saucepan according to the instructions on the package. Boil the eggs.
  2. While the rice is cooking, chop all the vegetables and place in a large bowl. Add the corn, olives, and tuna.
  3. Once the rice is ready, drain very well from any excess water and rinse it with cold water to cool it down. Add the rice to the other ingredients. Season with salt, pepper, and add the olive oil. Mix well. Taste and add salt and olive oil if needed. You can serve immediately or leave to cool down for 10-15 minutes. Garnish with the boiled eggs, sliced, and mayonnaise on the side.
