Chocolate Chips Muffins

I am refraining from baking these days, mostly because it is impossible to find flour anywhere! But I miss the smell of freshly baked cakes and my baking spirit had to solve the situation!

I encourage you all to try my recipe: it has less sugar than most recipes available online and less butter! Here the added sweetness is guaranteed by the milk chocolate. However, if you are looking for a fruit-y version, check my recipe for Blueberry and Poppy Seeds Muffins.

This recipe provides the ingredients to make 12 muffins.

Instructions

  1. Preheat oven at 170C (fan).
  2. First, combine all the dry ingredients in a bowl (flour, salt, sugar and baking powder). In a separate bowl, combine the wet ingredients (eggs, milk, vanilla, and butter).
  3. Add the wet ingredients to the dry ingredients and mix well with a whisk, until you get a smooth batter. Add the chocolate chips and combine them in the batter using a spoon.
  4. Take a muffin tray and place paper muffin cases in each mould. Fill the muffin cases with the batter, leaving approximately 1cm space from the border of the case. Place the tray in the middle of the oven and bake for approximately 20-25 minutes. Once baked, leave the muffins in the tray to cool before transferring them onto a serving plate.
