Cod-based dishes are so easy to prepare: you can use a variety of flavours and you can hardly overcook them. My oven-baked cod is enriched with white wine and lemon breadcrumb crust. Serve it with your favourite veggies, and voilà, dinner is ready!
Baked Cod with Zesty Breadcrumbs
Pre-heat oven at 200°C (fan).
Put the cod fillets on a baking tray, previously greased with one tbsp of olive oil. Season each fillet with olive oil, salt, and pepper. gently rub the seasoning with a brush or using your hands.
Take a small bowl and add the breadcrumbs, garlic and parsley (both finely chopped),1 tbsp of olive oil, the zest of one lemon (grated), a pinch of salt and pepper. Add 60 ml of white wine and mix all the ingredients with a fork.
Spread the breadcrumb mixture over the fish. Add the chopped tomatoes and pour a bit of olive oil and pepper. Bake in the oven for 25 minutes. Serve with boiled vegetables.
