Hello! I'm Stella, Italian by birth, with Myanmar roots, currently UK-based. Despite living in a fast-paced world, I feel and embrace the importance of eating well and healthy. I find inspiration in food itself: my recipes are for everyone who loves eating well, who wants their meal to be homemade and easy to prepare. There is nothing more comforting than a homemade bundt cake. Whenever my husband and I feel like having a homemade cake, we always choose the bundt cake (the so-called ciambellone in Italian). And it is incredibly easy to make as well.

Since Halloween is approaching, I’ve made a Halloween-themed bundt cake with pumpkin puree, ground cinnamon and ground allspice. The pumpkin puree makes the cake so moist! As usual this is a #reducedsugar cake (but feel free to add more if you prefer or even use less, depending on your taste) and #nobutter as I substituted it with sunflower oil. 

I had so much fun decorating it, using royal icing (recipe from @myfoodiedays ), but you can also simply dust it with icing sugar. Pair it with a spicy chai latte or a cup of tea, and you will have the perfect treat🎃

Finally, a new recipe after a very long time. I realize that I haven’t had much time to dedicate on the blog because of life stuff, work stuff, then again life stuff plus life stuff, and work stuff with more work stuff…

I have been asked quite a lot lately if I feel the pressure of posting new recipes. Sometimes I think it is quite hard work to keep the audience engaged all the time, especially on social media, but I would not say I feel pressure. This is a hobby to me, a space for my own self-care where I can talk about food, share memories and experiences. And that made me think that I should include more @the_potato_gnocchi_club moments in my routine so I’ve come up with an idea: Let’s set a target and commit to posting a new recipe every two weeks! That should be feasible, I hope! 😀

So the target is set and here I am sharing this gorgeous recipe. I prepared these mini tarts a few weeks ago, when my little sister came to visit me from Italy (first family visit in 2 years!).

I used the @silikomart mini tart Twist moulds kit. The tarts have a shortcrust pastry base, filled with a creamy chocolate sauce and decorated with these cute panna cotta twists!

Dropping a picture after a loooong time to say hi and to show the only thing I've prepared in the last two weeks 😅

I've been spending some time with my family in Italy after more than a year without seeing them and needless to say that I've been properly spoiled... ❤️

I also wanted to bake a cake and of course it had to be a fruit tart! Topped with all the seasonal goodies available over here 🍓🍑 What do you think??

I cannot believe it is almost the end of July. Summer should be all about recharging one’s batteries so I will take a summer break from the blog for the month of August, coming back in September with more recipes!

However, before going on a break I wanted to share with you another #myanmar recipe, which I’ve shown on social media already and caught your attention! 🤗

Allow me to introduce you to Pe Kyaw (it reads “pejò”), chana dal/split chickpeas crackers. These work well as a snack or as an appetizer, served with a spicy chutney or dip. In reality, pe kyaw are usually served to garnish one of the most popular Burmese dishes, of which I have been testing the recipe following my mom's virtual instructions.. and I will share more details in the autumn 🤫 (also because it is more appropriate for when temperatures cool down!)

  • Our lovely neighbours gifted us with courgettes and #courgetteflowers from their garden. We immediately used them for our lunch!

I first sautéed half #onion in a pan with #butter and olive oil, then added the #courgettes finely sliced and tossed them for a few minutes. I removed the pan from the heat and added the flowers (saving a few to garnish), finely sliced and set them aside. I cooked the pasta (I used penne by @dececco_pasta ) and once ready added the cooked pasta in the pan with the courgettes. I added grated Parmigiano and a couple of tablespoons of cooking water from the pasta, gave a final toss and lunch is done!

Sometimes I tell myself to take a break from baking (and consequently eating cakes), but it never lasts more than 2 days 😅 

The temptation mostly comes from all the wonderful seasonal fruit, and it would be a shame not to enjoy them!

So here's a very easy, hassle-free cherry cake recipe, which is also dairy-free since I used sunflower oil instead of butter, and almond milk instead of dairy milk/yogurt. 

No need to use a lot of sugar here, as the cherries will release their natural sweetness at each bite.

👉 INGREDIENTS (20cm round cake tin)
• 170 grams Sugar (Caster or Light Brown Sugar)
• 2 Eggs
• 1 Lemon (zest grated)
• 150 grams Vegetable Oil
• 1 teaspoon Vanilla Bean Paste
• 80 milliliters Almond Milk
• 200 grams Plain Flour (you can also use 150g plain flour + 70g almond flour for added crunchiness)
• 16 grams Baking Powder
• 1 pinch Salt
• 270 grams Cherries (pitted weight, 250g or 300g work as well of course!)
